BEAN INGREDIENTS:

500g Tio João Black Beans
1 bay leaf

CREAM INGREDIENTS:

4 tablespoons of olive oil
1 large onion, chopped
2 garlic cloves, minced
3 peeled and seeded tomatoes, chopped
2 tablespoons of tomato paste
2 teaspoons of hot paprika
2 teaspoons of crushed red pepper
1 dessert spoon of brown sugar
1 tablespoon of lemon juice

Preparation

HOW TO PREPARE THE BEANS:

Place the beans in a sieve and wash with running water. Bring the beans to a bowl, cover with water. Close the bowl and let the beans soak for 2 hours. Change the water twice during this period. Drain the beans and discard the soaking water. Bring the beans to a pressure cooker, cover with water and place the bay leaf. Close the cooker, take into the heat, at a high setting and when the pressure starts, lower the heat and cook for 20 minutes. Let all the pressure release and open the cooker carefully. Keep it still.

HOW TO PREPARE THE CREAM:

In another pan, heat the olive oil and sauté the onion until wilted. Add the garlic and when it starts to brown, add: the chopped tomatoes, tomato paste, paprika, pepper, brown sugar and lemon juice. Cook for approximately 2 minutes, stirring constantly.

Add the beans with the cooking broth to the cream. Let it cook for approximately 20 minutes or until the broth reduces and thickens. Turn off the heat.

Serve with your favorite meat and green leaf salad with tomatoes.


TIP: To soak and cook beans, always use filtered water to avoid flavor changes.
